Garlic Ginger Chicken
Ingredients:
- 2 pounds skin-on, boneless chicken thighs
- 1 cup thinly sliced red onion
- 2 tablespoons minced garlic
- 2 tablespoons minced peeled ginger
- 1/4 cup soy sauce
- 1/4 cup fresh tangerine or orange juice
- Freshly ground pepper
Directions:
- Wash chicken thighs and pat dry.
- Combine remaining ingredients in a sealed storage bag or container.
- Add chicken to marinade and coat well with mixture. Marinate refrigerated for at least 1 hour.
- Remove chicken from refrigerator and preheat grill.
- Place skin side down on low grill. Cook for 8-10 minutes. *
- Flip and cook for 8-10 minutes. *
- Remove from grill and allow to rest for 5 minutes before serving.
* Cooking times will vary depending upon grill. Make sure chicken reaches an internal temperature of 165°.
