Meatloaf
Serves: 4-5 Rods
Ingredients:
- 1 small (1/4 lb) onion, peeled and chopped fine
- 1 stalk celery (about 2 oz), chopped fine
- 2 lbs 80% lean ground beef
- 1 Tbsp sea salt
- 1 tsp ground black pepper
- 1 Tbsp fresh parsley, chopped
- 1/3 cup panko bread crumbs
- 1 large egg
- 1/3 cup plus 1/4 cup BBQ Sauce
Directions:
- Preheat oven on 325 degrees.
- Mix all ingredients well in large bowl, except 1/4 cup BBQ sauce. Remove from bowl; place in meatloaf pan. Rub small amount of water on loaf to smooth.
- Place in oven on center rack. Bake 60-65 min or until internal temperature reaches 125 degrees. Remove from oven; pour off excess fat and water.
- Brush on remaining BBQ sauce; place back in the oven. Continue to cook until internal temperature reaches a minimum of 160 degrees, about 40 min. Remove; let rest 10 min before slicing.
