Skillet Chili Beef Over Cornbread
Ingredients:
- 1 1/2 lb ground beef (50/50 sirloin/chuck)
- 1 14 1/2 oz cans chili seasoned diced tomoatoes, undrained
- 1 14 1/2 oz can Mexican style corn, drained
- 1 14 1/2 oz can red kidney beans, drained
- 3 tbsp chopped jalapeno
- 2 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cayenne pepper
- cornbread muffins
- 3 tbsp chopped jalapeno (in cornbread muffin batter)
Directions:
- Brown ground beef over medium heat. Pour off drippings.
- Add tomatoes, corn, beans, jalapeno, and spices. Bring to a boil stirring frequently.
- Reduce heat to medium-low. Simmer 5-10 minutes stirring occasionally.
- Serve over cornbread muffins.
